This January, a new restaurant opened in San Francisco that aims to continuously reduce its environmental footprint. Looking beyond just whether their food is sourced local and organic, the owners, who also started Mission Chinese Food, are looking at the ecological impact of their business choices and hoping to use their experience to support broader change in the restaurant industry.
